The herd of Borgo del Gazzano is made up of two types of livestock

The red-white Friesian is characterized by the production of a milk with a high percentage of KBB-type casein (about 50%), the most valuable.

The remaining percentages, in both breeds, are equally divided between two other types of caseins, KAA and KAB. KBB casein is easily coagulant so a high concentration of the same would not be the ideal solution in terms of production. On the other hand, a correct mix of the three caseins leads to a milk that is optimal for the production of Parmigiano-Reggiano.

The herd made up of approximately 50% of both breeds leads Agrizoo to therefore have the right mixture in 3 almost equal parts of the 3 caseins KAA, KAB, KBB. The milk that is produced has the characteristic of being slightly fatter than other types of milk that do not have this mix. The result is a particularly sweet Parmigiano-Reggiano, which leaves no spicy or bitter aftertaste or unpleasant residues in the mouth. Agrizoo, loyal to its commandment of the closed-cycle supply chain, does not buy livestock from the outside so the new generations all come from inside the farm.

OUR ANIMALS DIET

The fodder and foods that the animals eat come exclusively from organic farming which prohibits the use of chemical fertilizers, herbicides, pesticides, insecticides and are GMOs. Free: that is, nowhere in our supply chain do animals come into contact with GMOs.

Animal raising and welfare: animals are raised in free range stable with deep litter. There are three categories of cattle: lactating cows, dry cows and pregnant heifers.

These last two categories, between the seventh and eighth month of pregnancy, are put on pasture, always when the season allows it.

VETERINARY CARE

Animals are treated according to the principles of homeopathic medicine. 

Since 2010 we have also been using an ozone sanitation system: in this way, inflammation and infections in animals are prevented, the possibility of germs and bacteria developing is 100% reduced and the use of antibiotics is avoided.

Traceability and certification

All the steps (identification of the animals, feeding, breeding, transformation) allow full traceability of the product and are certified according to the provisions of the law for the production and transformation of products from organic farming (Reg. EEC 2092/91).

Casein plaques are applied to the forms to protect consumers on the traceability of the product.
