A millenary art
and not only
About 20 km as the crow flies from Borgo lies the town of Bibbiano, the “cradle of Grana”. The origin of this noble cheese is attributed to this place, around the 12th century, thanks to the wise work of the Benedictine and Cistercian monks, then handed down over the centuries to the present day. Fundamental to Borgo is therefore the concept of “Once upon a time”: constantly living in the present without forgetting where we come from. A mix of history and progress exactly like the mix of our cattle breeds.

Parmesan cheese Italian It is the only one to possess three DOPs, created approximately a century ago, of which Parmigiano Reggiano is undoubtedly the noblest and most prized.
This is thanks to the presence of three colonies of bacteria in the meadows of our territories whose forage allows us to produce cheese in an absolutely natural way, using only milk, rennet, salt and water.
The uniqueness of the area that mainly includes three provinces (Parma, Reggio and Modena) and partially touches two others (Mantua to the right of the Po River and Bologna to the left of the Reno River), absolutely unproduceable in any other part of the planet, has allowed it to acquire the name of “Treasure Island”. A name that all the producers of the aforementioned territory are rightly proud of.

The Borgo del Gazzano brand was born in 2012, when the Agrizoo company decided to take its first steps towards final sales and no longer aimed only at traders.
It consists of two words:
- Village, a centuries-old concept. It stems from the marshy origins of our land. Precisely because of this geographical conformation, in the past it was impossible to communicate even within 100 meters of each other's homes, especially during the winter. For this reason, for sheer survival, those who lived in these areas were forced to produce everything at home. Nine hundred years later, the farm converted completely to organic production. A choice that led us back to producing everything at home, because we cannot buy milk or hay from our neighbors, as they do not have organic certification. A choice no longer based on survival like our ancestors, but on marketing, following a philosophy of life in which we strongly believe.
- Gazzano, a centuries-old concept. A local legend passed down from father to son tells that in a small inn located about 1 km as the crow flies from the Borgo, a certain Napoleon Bonaparte slept one night in 1800. That year, the French emperor decided to annex Parma to France. The territory of the ducal city, already heavily influenced by the French presence thanks to the Farnese family, was divided into thirteen Mairie, or small districts. One of these was San Donato, of which Gazzano was a significant portion (over 60%). From a toponymic perspective, the Borgo today stands right in the center of Gazzano.
A story therefore carved in the past centuries, which belongs to us and strengthens us greatly from an identity point of view.

Since 2001, the year in which the Agrizoo company decided to become organic, our supply chain process has been completely 0 km. We are one of the very few companies within the Parmigiano Reggiano district to process exclusively our own milk with the stable in the same courtyard area as the dairy, included in a single production complex.
The milk collection is one of the shortest in the world: only 200 m.
The precious milk of our champions (that's how we like to call our "girls", the cows) arrives at the dairy in more than optimal conditions, without the slightest stress. The best possible conditions for top-notch processing.
Inside the Borgo there is great attention to those who work there. The intervals between one milking and another of thirteen hours from afternoon to morning and eleven hours from morning to afternoon, allow our stable workers and, following them, our cheesemakers, to finish their work an hour earlier in the evening and to sleep an hour more at night.
Fundamental elements for the well-being of all animals because we all belong to this genus. We at Borgo know this well, that's why we take care of this aspect as an absolute priority.

The phrase that the founder of Agrizoo, Antonio Minardi, who passed away in 2022, always loved to repeat, has become a mantra for subsequent generations.
In reality, it is not necessarily true that an organic product is necessarily better than a conventional one, but the fact that it notoriously costs more becomes an obligation for the person who produces it to ensure that this is truly the case.
This is the lesson he left us, our guideline that we follow every day from dawn to dusk.
In fact, if the consumer spends more, he has the sacrosanct right to demand more, to expect something superior not only from the organoleptic point of view, but also and above all from the point of view of taste.
Our lifestyle choice that makes us practically unique is based on these seven words, seven like the days of the week that see us constantly at work, because the production of Parmigiano-Reggiano can never stop: to have a product that is “Always Sweet!”

A village with its own challenge: to promote an elite product within the Parmigiano Reggiano universe, one that makes its unmistakable hallmark not its origins but its taste:"" Always Sweet!"

Finally, in 2010, the company's top management realized that not only careful attention to all stages of production could guarantee the high quality of the product, but also particular attention to the environment.
Hence the choice to invest in the photovoltaic system: yet another inside Borgo bet!!!
