The mix of these four breeds allows us to have a cheese that is not too fatty, therefore soft on the palate, nor too sour or pungent, especially in the high maturation periods. This is thanks to a wise distribution of the number of heads that allows a correct mix in three almost equal parts of the 3 caseins KAA, KAB, KBB that determine this particular sweetness.
Borgo is also very careful to avoid inbreeding of the cows, so, thanks to information technology (we were among the first to introduce it way back in 1998), all the crossbreeding is managed very carefully in order to have all the animals different from each other and therefore improve the quality of our “girls”.
This allows us to have excellent milk.
Not only that: free housing, provided for by the European organic regulation as long as certain square meters per head are guaranteed, allows us to safeguard the well-being of our animals, which has always been the cornerstone of our activity.


The fodder and food that the animals eat comes exclusively from organic farming that prohibits the use of chemical fertilizers, herbicides, pesticides, insecticides and is GMO-free: that is, nowhere in our supply chain do the animals come into contact with GMOs.

The animals are treated according to the principles of homeopathic medicine.
Our organic milk is processed using preservative-free rennet.
Since 2010 we have also been using an ozone sanitization system: in this way we prevent inflammation and infections in animals, we reduce the possibility of germs and bacteria developing by 100% and we avoid the use of antibiotics.
The third product we use is particularly noteworthy: a spray that creates a protective film, applied immediately after milking and with the aim of protecting the still open sphincter of the udder just milked.
As soon as the sphincter closes, the film dries and falls off, leaving the breast free to breathe.



All the steps carried out in this way (identification of the animals, feeding, breeding, processing) allow for full traceability of the product and are certified in accordance with the legal provisions for the production and processing of organic farming products (EEC Reg. 2092/91).
Casein plates are applied to the forms to protect consumers regarding the traceability of the product.
